Very sharp Japanese Damascus knife!

This is a 7 inch forged Japanese damascus steel knife with a Pakkawood handle. Damascus knives have a unique wavy pattern and are known to be quite hard and flexible while maintaining a sharp edge. This knife cuts like a dream. Out of the box, there’s no need to sharpen the knife. I have a hard time cutting through tomato skin with a lot of knives and this knife just grazed the skin and cut right through it! I was pleasantly surprised that the unique pattern on the knife doesn’t appear to be laser etched and that this is indeed real damascus steel. Pakkawood is a man-made material. It’s made from real wood but then uses a veneer covering that’s not real wood. It’s supposed to be more resilient and resistant to hard-wearing use than a fully wooden handle. Overall, this is not a cheap knife and the performance matches its price.

Very good for the money, a few issues but no deal breakers at all

Nice weight to the knife for a nigiri, And the point of balance is almost perfect. It's maybe a millimeter or so too far forward but nothing that makes any noticeable difference. Came razor sharp and I can tell by the edge that it is very good steel. It's believable to me that it's vg10, I own a number of VG10 knives and i'm a bit of a knife freak in general. It certainly feels better than 8CR or something like that and light years better than krupp or .5cr. So it is believable to me that it had least has a vg-10 core.

Patterning is very faint. It makes me wonder if it was laser etched rather than genuine folded steel. Of course it can be difficult to tell and I don't really care, but if you were hoping for a bold Damascus pattern this may not be the right choice. I actually had to turn it in the light to see the patterning.

For the money I would say this is good quality and worth purchasing. It's got a few accents here and there to make it look "Fancy" and the build is good, and the edge is very nice.

One thing I will say that cost it a star is that normally on nakiri edge is absolutely flat for about 3/4 or 4/5 of the blade, rounding slightly at the very end to allow for a rocking motion. This is only flat for about just over half, maybe 2/3 of the blade and then it begins its curve. Some people may actually wind up preferring that, and it won't make a big enough difference for me to dislike the knife at all, but it is worth mentioning. On the other hand that does give it a very nice rock for those times when you want to do a rocking dice of herbs or the like, and it's still got plenty of useable flat blade so as i said some may even think of it as a positive. But it's not quite what you'd normally expect (i'm nit picking a bit).

Overall, i've cut up some meat and a bunch of veg and some watermellon and some hard rutabaga with it and it's performance is very nice, nice in the hand and good performance. And after all that it still shaved arm hairs like they owed it money. So, happy with the purchase.

Pretty good knife

Seems like a pretty good knife, but it doesn’t cut sweet potatoes as easily as I’d hoped it would. It cuts everything else pretty well. I think that it’s a good knife- seems sturdy and will last a while. I love the way the handle is connected to the blade, so there’s less of a chance of bacteria getting stuck in the handle.
